Instead of "observe" I believe that you meant to say "have" or "experience".

Many people say that they can have or experience OOBEs when doing simple task like eating, dreaming and sleeping. Is this true?

Yes there are people where for one of many possible reasons such as an acute illness, the effects of certain illegal substances and legally prescribed medications or extreme ongoing pain, the bond or link between their spiritual and physical body can be so weakened that their consciousness regularly and spontaneously moves outside of and away from where their bodies are.

The link or so called silver cord remains intact until the soul permanently leaves its physical body for the final time at the point of death. It is thought that a weakened link between the two bodies is an essential requirement for effective mediumship. Maybe this is why so many world class mediums have had so much pain and illness in their lives. The illness and/or pain might be a means to an end of keeping the link weakened so that Spirit has more access to their channel?

So some advanced OOBE masters can consciously make themselves have one, but they are an exception rather than the general rule. Usually the inner consciousnesses is projected only as a result of a severe trauma or shock, or an urgent need to escape an unbearable situation where there seems to be no other exit or way out. Some prisoners living for a long time in solitary confinement have had this happen to them, presumably to keep them from going insane.

Their mind's ultimate defense mechanism against insanity and self annihilation?

Some do say that our dreams can but do not always act as a springboard or doorway to us ultimately having an OOBE (make it easier).

The best type of dreams for inducing an OOBE are LUCID DREAMS - where right in the middle of their dream the dreamer becomes fully aware that he or she is dreaming. Some also say that many dreams involving us flying or alternately rising high up in the air are actually OOBEs in disguise.

Its all about the mind - the one in the physical can be altered by substance.  And that allows that the spirit mind can take over.  When you go into spirit that is what leaves the body.  As long as the silver cord remains attached the physical is alive.  It is severed at death of the body.
